A subscribed thread is like getting...the paper. Every time a new one comes out, they deliver it. Well, okay, that didn't work so well. A subscribed thread just means that you will get a little notification in your "subscribed threads" tab when a thread you're interested in gets a new post. I know you're a GT, so you can subscribe to your GE thread, and then quickly see if anyone has posted on it recently. You could subscribe to this thread, and then find out that I have replied to you.
You can subscribe in a few ways:
When you create the thread, select "subscription type" and choose what kind of subscription you want - you can be emailed or not emailed type of thing. I always choose not, and instead just check my "subscribed threads" under my WI bucks balance at the top left of the forum.
When you reply to a thread, you can also choose to subscribe (found down by the advanced reply submit post buttons).
Or, you can click "thread tools" at the top right of the thread, and click the green checkmark Subscribe to this thread button.
It's pretty helpful, to be quite honest - saves a lot of time searching for the threads you're interested in, and it's easy to see if you need to check it!
