Ok, well it's relatively easy! Does take a bit of time, but nothing's too easy...
Open up your image.
Select the free-select-tool by hitting "F".
Now, just draw around around the parts that you DON'T want white, you can add new parts to your selection by holding SHIFT and repeating the process. (You don't have to hold the mouse down and draw around it like that. Just go by clicks around it!)
Once you've got the selection of the parts you DON'T want white, on the menu go to Select>Invert, or hit Crtl+I for short. Your to-be-background will now be selected.
Select the Paintbrush tool, get the largest scale and set your color to White.
Paint over the entire picture. Only the part that's selected, will get filled in!
It will take some time, but you'll end up with the result you want!

2. Take a medium sized round brush and paint the area surrounding the part you want to keep, but leave about an inch gap between the image and white.
3. Once you've got 2 done, take a fine brush and outline the area you want to keep. Just a small stroke at a time, just in case your brush some how turns something white that you didn't want white. If that happens just hit the Undo button.
4. After you've out lined the area take a larger brush, like the one you had before and paint the rest white. And you're done!
