The objective of bamboo break is to clear a complete row of blocks. It does not matter what colors the blocks are (they do not have to be the same color). Once you complete one horizontal row, the blocks in that row will disappear and you will be rewarded points. Continue to complete rows until the level is finished. You will then move on to the next level.

It's really best to just practice. It's like Tetris if you can get your hands on that game anywhere to practice even more.
Basically it's like you're putting a puzzle together on the bottom. All you can do is decide which column you want the block to fall down onto and rotate it before it hits the bottom. The goal of the game is to keep the blocks from piling up to the top of the screen. If the blocks reach the top of the screen, you lose (sort of like in Cash Cow). The way to clear the blocks is to line the pieces up correctly to create a complete row with no holes. The game is 12 levels long.
There is another goal of the game besides removing the blocks, however....there are challenges that pop up occasionally near the bottom of the screen and you are given a limited amount of time to complete them (clear exactly 4 rows! clear 6 rows!). Nothing bad happens if you do not meet the challenge, but if you are able to complete it, you get either additional points or bonus chips. The forum posts seem to indicate that the bonus chips you collect may make a difference in whether you are awarded a trophy at the end of the game or not (but I can't confirm that because the farthest I have gotten is level 11...grr!).

To get used to it, I'd ignore the challenge section and just try to flip the pieces and move them over making sure that you don't have any holes. When you get holes it causes the playing section to get smaller until it eventually reaches the top and the game is over. Try to keep the pieces as close to the bottom of the screen removing as many lines as you can. The line removes when it is full of tiles with no holes. When you get used to it you can try to stack the pieces so you are getting multiple lines at a time. Then adding the challenges makes it even more fun.
