Level 3 Play all the time

I am curious as to what Tabby means when she says you can play at a level all the time after level 3. Can someone explain it to me. Does it mean you can not be demoted?

No, it really doesn't mean that. It means that you've gotten as high as you can get, and every time you complete that job, you'll get the highest amount of money paid. However, if you don't complete that job in several tries, you'll get put back down a level (you can always work back up).
